possibly something about revenge?
beowulf has the whole notion of blood vengeance, hamlet has both fortinbras and hamlet wanting revenge for their fathers' deaths, and (kind of a stretch) the canterbury tales has many of the pilgrims telling stories about another pilgrim out of revenge for something the other has done to them

I agree with joe about hamlet and beowulf being about revenge but the canterbury tales doesnt fit that.

Or it might be pride the fall Beowulf the fall of many people in the tales of the Canterbury tales and the accession of Claudius in Hamlet

pride could definately be it but i dont see how characters in the canterbury tales fell... if you can support it i would say it could definately be a uniting theme

pride, fate (wyrd), the innevitability of death, vengence, and stories within stories
are all commonalities between Beowulf, The Canterbury Tales, and Hamlet

Religion(Christianity)and morality also play a part in all three.

a stuctual theme IS
stories with in stories.

another themem is
people are not always as they seem, exteriors can be decieving

Flaws/imperfection leads to the down fall.

Reality vs. Fiction

and

i was thinking maybe something to do with being the first of the time. Like beowulf - first hero of rememberance, Canterbury tales - first english poem in a french rule, also charactors are discribed for the first time in a real way. and Hamlet he is the first heir to a throne that doesnt want to take it.
BUT im not sure any of that is right just wondering if it is a good idea
